What’s For Dinner? Leftovers, the horror!

A lot of everything, but a whole lotta nothing!

I hate leftovers.  I hate the feeling of having to use up every little morsel in the fridge, or karma will bite me in the you know what.  Ever read ‘The Road‘?  It makes you appreciate all those little morsels.  But I still would prefer to make something new every night.
But tonight was leftover night.  I had ham, broccoli, and cooked noodles in the fridge. Looked like the makings of a Ham & Broccoli Noodle Bake, obviously.  
It actually got really good reviews from my kids – my pickiest ate it, and the 2nd pickiest said “Mom, I love this!  The sauce tastes just like the sauce from the macaroni at Ikea!”  Wow, that is a compliment, if you know how much that kid loves that macaroni.  
So here is a recipe for a quick, mid-week dinner from all that stuff you probably have in your fridge.
Ham & Broccoli Noodle Bake

2 cups cooked noodles (bows, spirals…)
2 cups broccoli, cooked
2 cups cooked, diced ham
2 tbsp margarine
2 tbsp flour
1/4 – 1/2 tsp salt
pepper
1 tsp dry mustard
2 cups milk
1 cup grated cheddar cheese
1/2 tsp curry (optional)
In sauce pan, melt margarine, then stir in flour, salt, pepper and mustard.  Slowly add milk, and cook until thickened.  Once thick, remove from heat, and add the grated cheese, stirring until melted.
In a baking dish add ham, noodles and broccoli.  Pour cheese sauce all over.  Bake in a preheated 350 degree oven for about 45 minutes.  
Yum-yum!
