A Yummy, Healthy Dinner in Less Than 30 Minutes
This is such a quick dinner to make. More or less what you see in the above picture is all you need. I ‘borrowed’ this recipe from the “Chef At Home, Michael Smith”. Luv him. He’s a tall drink of chef-a-licious water!
Anyhoo, I digress, here is the recipe.
Homemade Tomato Sauce
olive oil
1 onion, minced
about 6 cloves of garlic (peeled, but whole)
1 – 28oz can whole tomatoes
1 bay leaf
1 tsp oregano
salt, pepper
1 tbsp brown sugar (optional, but I added this on my own, it just ramps up the flavour)
- Saute the onion and garlic in olive oil, until they just start to turn brown.
- Add tomatoes, bay leaf, oregano, sugar, salt and pepper.
- Simmer for about 15-20 minutes.
- Remove bay leaf.
- Put sauce in blender, and puree.
Voila! Serve with whole wheat pasta, and dinner is ready, and healthy! We also like to top it off with parmesan cheese, and a dollop of ricotta cheese!
