Heading into the weekend, I thought I would post an idea for breakfast. Breakfast is my favourite meal of the day – both to eat and to prepare! But weekday breakfasts leave little to the imagination – there is nothing creative about a bowl of cereal! But on weekends, it’s a different story.
- 2 cups milk
- 1½ cups oats
- 2 eggs
- ⅓ cup oil
- ½ cup white flour
- ½ cup whole wheat flour
- ¼ cup wheat germ or oat bran
- 2½ tsp baking powder
- ½ tsp salt
- 2 tbsp sugar
- Combine the milk and oats, then let them sit for 5 minutes.
- In a separate bowl mix together the egg and oil.
- After the oats have soaked for at least 5 minutes, add the egg/oil mixture.
- In a separate bowl, mix together the flours, wheat germ, baking powder, salt and sugar.
- Then add the wet mix to the dry mix, and stir until just combined.
- Cook on a med-high heat griddle.

Ah-mazing! i used wheat bran instead of wheat germ, and it seemed to work :)

How many pancakes does this make?
I noticed that there is no baking powder or soda in these pancakes. Do you really make them without a leavened? I would be interested in finding out. They sound so healthy and they look fabulous!
