As I have said before, we love breakfast in our house! On weekends the hubby makes most of the breakfasts, and I’m so grateful for the chance to sit and drink my coffee while he feeds us! It’s great!
So this morning, to kick off the New Year, we had crepes. My kids love, love these. And they are so great because we mostly fill up on fruit, and hardly use any syrup. Here’s the recipe:
Basic Whole Wheat Crepes
(adapted from the Joy of Cooking)
Combine the following in a blender or food processor until smooth. Then place covered, in the fridge for at least 30 minutes. You can even make the batter the day before.
1 cup whole wheat flour
1 cup milk
1/2 cup warm water
4 tbsp butter, melted
3 tbsp sugar
When ready to cook, preheat your pan over medium heat, and coat it with a little butter. Stir your batter, and pour about 2-3 tbsp into the pan. Then lift the pan off the burner, tilting and rotating it so the batter forms a thin circle. Cook until the top is set, then flip. You can eat them as they come off the pan, or you can stack them in between sheets of wax paper until the batter is gone, and you are ready to eat. You can even freeze them at this point.
Then fill ‘em up! You can use whipping cream or custard or yogurt, and all kinds of fruit. Top them off with more fruit, syrup or honey or cinnamon & sugar! Yum-yummy!
