On a cold winter’s night we feel the need for warm, comfort food. And we know cold winter nights here. This past week our thermometer has been reading between -20 and -28 degrees C at night. That is COLD. Freezing your nostril hairs cold. But secretly, I love this weather.

So here’s a vegetable soup recipe from one of our dinners this week. It’s so great for these winter nights!
It went over really well – our true test is whether the baby will eat it. And eat it he did.

Winter Vegetable Soup
Ingredients
- 2 tbsp butter or margarine
- 2 cups chopped cabbage
- 1½ cups chopped carrots
- ½ cup chopped celery
- ½ cup chopped onions
- 4 garlic cloves chopped
- 2 tsp oregano
- 2 bay leaves
- salt & pepper
- 1 – 28 oz can whole tomatoes, chopped
- 1 can tomato sauce (plain, no spices)
- 2 cups beef or vegetable broth
- 1 – 2 cups cooked noodles (I used egg noodles)
Instructions
- In a soup pot, cook cabbage, carrots, celery, onions and garlic in butter, until soft.
- Add oregano, bay leaves, salt, pepper, tomatoes, tomato sauce and broth.
- Simmer for about 30 minutes.
- In the mean time, cook your noodles in a separate pot. This is so they don’t soak up all of your liquid in the soup.
- Just before you are ready to eat, add the cooked noodles.
- Serve immediately.
