Pina Colada Pops

A simple summer treat!
Is it possible that these are too easy?  Easy is good right?!

So simple.  Yummy.  Kid tested and approved!
They are like a snack and a popsicle all in one, on a stick…

Pina Colada Pops
1 1L pineapple juice
1 can crushed pineapple
1/2 cup shredded, sweetened coconut
dixie cups & popsicle sticks
  • Combine all ingredients, and pour into dixie cups.
  • After about 1 hour, insert popsicle sticks.
  • Enjoy!
Tips!
  • I’m actually finding that the dixie cups are too big.  They look nice, but they pack a lot of popsicle.  So I’m going to find some smaller molds…
  • I made one version of these using a coconut drink, but we did not like them at all.  But if you are a fan of coconut water or juice, you may like the interesting flavour?
  • AND you are right lovelies, these would be FABULOUS with a splash of rum!  Just sayin’.
Maybe these treats will make you feel just like you are on a beach in the Bahamas?  ;)

    These look so amazing! My kids aren’t fond of coconut (the texture) so I’m trying to figure out a way to get the coconut flavor in there. However, I am thinking I will love them, and that I might need to add that dash of rum :)
