Fresh Salsa
6 medium sized tomatoes
1 ripe mango
1 pepper, yellow or orange for colour interest
2 tbsp chopped red onion
1 garlic clove
handful chopped cilantro
juice from 1-2 limes (depending on your tastes)
1 – 2 tbsp olive oil (depending on how much lime juice you use)
- Combine all ingredients.
- Let rest for about an hour to let the flavours combine.
- Serve with grilled chicken, tacos, grilled steak, or nachos!

Would you believe that I am half Mexican, and I don’t like salsa!!?? Maybe it’s because I loathe onions and cilantro. Everyone is always shocked when I say I don’t like it. I eat like a 2 year old, what can I say :) Your looks really pretty though and I bet for salsa eaters, it’s super yummy!!!
