Rewind! Oatmeal Raisin Cookies

I don’t know what the weather is like right now where you are, but here it is COLD.
I’m talking -26 degrees C cold.  Freeze your butt off cold.
But, call me crazy, I love this kind of winter weather in January…
It makes me feel like baking and nesting!
So how about a cookie recipe to beat the cold weather!
Nothing like cookies to make a house cozy!

Oatmeal Raisin Cookies
Serves: Makes about 48 cookies.
 

Ingredients
  • 1¾ cup flour
  • ¾ tsp baking soda
  • ¾ tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp nutmeg (optional: I leave this out. I hate nutmeg.)
  • 1 cup butter or margarine
  • 1½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 eggs
  • 2½ tsp vanilla
  • 1 cup raisins, chopped
  • 3½ cups oats (old fashioned rolled oats)

Instructions
  1. Whisk together flour, baking soda, baking powder, salt & cinnamon. Set aside.
  2. Cream butter and sugars together.
  3. Add the eggs one at a time. Combine until creamy and smooth.
  4. Add vanilla.
  5. Add the flour mix to the butter mix. Combine.
  6. Add the oats.
  7. Add the chopped raisins.
  8. Bake in a preheated 350 degree oven for 6-9 minutes. The less time baking, the softer the cookie.

Tips!
  • If you have raisins around that have seen better days (that is, if they are kind of old and really dried out), you can boil them in a little bit of water for about 1-2 minutes.  Set them aside to cool, then drain the water.  Chop them up and proceed with the recipe.
  • This recipe works best with old fashioned rolled oats.  I have used instant oats and they turned out well too.  Cookies with the old fashioned oats make a chunkier cookie, and cookies with the instant oats make a more chewy cookie.
  • You can add chocolate chips to this recipe if you wish!

 

Chewy.  Soft.  Sweet.  Yummy.
