I don’t know about you, but I find lunch time the hardest meal of the day.
It’s really just an annoyance haha…the same old, same old stuff everyday.
I’m trying to shake it up a bit around here, because, well, the kids have to eat. ;)
So I’m starting with simple, but delicious sandwiches.
And by changing the presentation of these sandwiches, or changing the ingredients a little bit, they are more fun to eat, and fancy enough for guests!
You probably have your own staple recipes at home, but in case you don’t here are 4 of the most basic sandwiches you can get…
Enjoy!
This one is my most favourite of them all!
There’s something so yummy about fresh basil, cheese and balsamic vinegar.
Mmmm, my mouth is watering just thinking about it!
Bocconcini, Basil & Tomato Sandwiches
tomatoes, sliced
fresh basil
bocconcini cheese, sliced
balsamic vinegar
olive oil
fresh ground pepper
- This is a very simple sandwich to make, and tastes like a restaurant lunch!
- Just get out your bread, add a tomato, a slice of bocconcini cheese, some basil, drizzle with a bit of olive oil and balsamic vinegar, then add fresh ground pepper!
Ideas!
- To make this sandwich even more fun, use different colour tomatoes!
- You can serve these sandwiches open faced or closed – which ever you prefer.
- You can also serve these sandwiches with little dishes of olive oil/balsamic vinegar mixes for dipping!
Who doesn’t love tuna sandwiches? Ok, well maybe that’s not the right question to ask…
But we do! Especially loaded up with bread & butter pickles!
And how pretty does this open faced sandwich look! Good enough for even the pickiest to try!
Classic Tuna Sandwich
1 can tuna (156 gm)
1 tbsp finely chopped onion
1 tbsp finely chopped celery
2 tbsp mayonnaise
1/2 tsp mustard
1/4 cup bread & butter pickles, chopped
bread
- Combine all the above ingredients, and serve on bread.
Ideas!
- You can make this sandwich a little bit fancy by making them open-faced, and topped off with pea shoots or alfalfa sprouts.
This sandwich is so good!
I’ve seen various versions on Pinterest,
but the inspiration for this one is from Ezra Pound Cake.
Simple fresh ingredients.
Simple Summer Tomato & Avocado Sandwich

avocado, cut into chunks or slices
vegetable spreadable cream cheese

bread

Turkey sandwiches with cranberry sauce are the best!
Not only are they a great way to use up left over turkey at holiday times, but they’re delicious any time of year!
