Coconut Chocolate Chip Macaroons

I love coconut.  I will eat anything that has coconut in it!
You name it.  I’ll eat it.
And a cookie that’s basically all coconut?  
With chocolate too?
Um.  Yum.

These are a family favourite.
They are delicate, chewy, coconut-y and chocolatey 
all at the same time!  Yes please.

And if you love coconut and chocolate chips you’ll love these cookies too!

(Or are they cookies?  I’m not sure whether a coconut macaroon is really a cookie or a candy?)  Either way, they’re delish!

Coconut Chocolate Chip Macaroons
 

Ingredients
  • 3 egg whites
  • ½ cup sugar
  • ¼ tsp salt
  • 1 – 14 oz package sweetened flaked coconut
  • ⅔ cup chocolate chips

Instructions
  1. Preheat your oven to 350 degrees.
  2. Whip together egg whites, sugar and salt until frothy.
  3. Then stir in the coconut with a fork.
  4. Add chocolate chips, and combine.
  5. Line a baking sheet with parchment paper, or a generous amount of cooking oil spray. They will stick!
  6. Drop the mixture onto the sheet by heaping tablespoons, about 1½ inches apart. They don’t spread out.
  7. Bake for 18-20 minutes, or until they start to brown.
  8. Let cool, then enjoy!

These coconut cookies are so pretty and tasty, that they make a nice homemade gift too!  
Just wrap them up in some parchment paper and tie them up with some pretty ribbon!
Homemade gifts are the best!

    My favorite Jewish cookbook was at our ski house and I had volunteered to bake for a friend’s daughter’s bat mitzvah. I figured I would give this recipe a try, and boy was it worth the risk! As I was mixing in the coconut I feared the proportions might be a little off, but not even one tiny bit. They got crispy on the bottom, firm on top and oh so moist in the middle! Parchment paper a must. I used mini chocolate chips and added about 1/4 cup of almond meal. Truly delicious!

    Woo hoo! Thanks for this recipe — I had a bag of sweetened coconut on hand and wanted to make chocolate chip macaroons for Passover (and let’s be honest, because I was craving them!). I found your site by Googling and rejecting a bunch of other recipes that called for ingredients I didn’t have on hand. Winner winner! They were fast, easy, and delicious. I’m going to have a hard time resisting the temptation to eat them all immediately.
