Rewind! Turkey Pot Pie using leftovers!

Ok, now that Thanksgiving is done, now what do you do with all of those turkey dinner leftovers?!
Throw ‘em all together and make a Turkey Pot Pie!
Don’t be intimidated by the lengthiness of this recipe, it is super easy.  
Especially if you already have stuffing made.
Yum yum.
Turkey Pot Pie

Stuffing Topping
For the topping you can use your left over stuffing from your turkey dinner!  If you don’t have any left, or not enough to make a crust, don’t worry, you can make a quick crust as follows:  

This is my go-to recipe for stuffing!  Yeeeuuum!  (there is a lot of stuffing here)

1 1/2 cups chopped celery
3/4 cup chopped onion
1 cup butter
8-9 cups cubed bread (I like to use a mix of white, whole wheat and pumpernickel)
1 1/2 tsp salt
1 1/2 tsp sage
1 tsp thyme
1/2 tsp salt
1/2 cup raisins and apples (optional)
  • Cook celery and onions in butter until tender.
  • Add bread cubes.  Mix until bread is coated in butter.
  • Add salt, spices, raisins and apples.  Combine well.
  • Set aside.

Creamy Turkey Filling  (this portion of the recipe is adapted from the Best of Bridge)
1 tbsp butter
1 cup chopped celery
3/4 cup chopped onion
2 carrots, chopped
1/4 cup flour
2 cups chicken broth
1/2 cup dry white wine
1/2 tsp thyme
salt & pepper
4 cups chopped cooked turkey
1 cup frozen peas
1/2 cup whipping cream (or you can use Half & Half too)
  • Cook celery, onions and carrot in butter, until tender.
  • Add flour, stir to coat vegetables, and cook for about 1 minute.
  • Gradually whisk in chicken broth, wine and spices.
  • Bring to a boil. 
  • Reduce heat to low, then add turkey and peas.  
  • Simmer until thickened.
  • Remove from heat, and let it cool slightly.
  • Transfer turkey mix into an oven dish.
  • Spoon the bread topping over the turkey mixture.
  • Bake, uncovered, in a preheated 350 degree oven for 45-60 minutes.
  • Filling should be bubbling, and the topping golden browned and crispy.

Thanksgiving: Harvest Apple & Herb Stuffing

So to finish up my Thanksgiving menu, here is my go-to recipe for stuffing!
It’s buttery, rich and so flavourful!
Oh, and it soaks up gravy amazingly!!
Harvest Apple & Herb Stuffing
 

Ingredients
  • 1½ cups chopped celery
  • ¾ cup chopped onion
  • 1 cup butter
  • 8-9 cups cubed bread (I like to use a mix of white, whole wheat and pumpernickel)
  • 1½ tsp salt
  • 1½ tsp sage
  • 1 tsp thyme
  • ½ tsp salt
  • ½ cup raisins and apples

Instructions
  1. In a large fry pan, cook celery and onions in butter until tender.
  2. Add bread cubes, and mix until the bread is coated in butter.
  3. Add salt, spices, raisins and apples. Combine well.
At this point you can do either of two things:
  1. Stuff your turkey with the stuffing and bake it that way, or
  2. Bake the stuffing separately. To do this, put the stuffing in a casserole dish, cover it, and bake in a preheated 325 degree oven, for 45 minutes. Then uncover and bake for 15 more minutes.

 

Tips!
  • You can use any kind of bread that you wish.  All white, or mix in whole wheat, raisin bread, cranberry multi-grain…
  • Use real butter, not margarine.  It makes all the difference with the flavour!

My Thanksgiving Tablescape

With American Thanksgiving right around the corner, I thought it would be a good time to put up some pictures from our Canadian Thanksgiving that just passed!

On a side note, I have to say that I am thankful that our 
Thanksgiving is 2 months before Christmas! 
I don’t know how all of you in the U.S. do it having 2 major holidays 
within weeks of each other!  Whew, what a lot of work!

Anyway, as you can see I like to keep things pretty simple.  
Tablescapes are great, but there’s got to be room for food, and lots of it!
This year I made candle holders out of gourds.
They were so simple to make, and so pretty that I will definitely be doing these again.
All you have to do is core out a little spot for a tea light with a knife, and add your candle.

We have such a big table that I have never had a tablecloth large enough to cover it,
or even one that matched my dishes.
But this summer I found this pretty Liz Claiborne drapery fabric (at 70% off I might add),
so I decided to make a tablecloth out of it.
Total cost for my tablecloth:  $15.  Oh yeah baby!
Why hadn’t I done this before?
It was so simple to make, I got to pick the fabric I wanted, plus I didn’t have to settle
for the same old, same old polyester tablecloths that never match anything I own.  Love it!
I also love that the colours aren’t what you might expect for a fall tablescape,
but I think the light purple goes nicely with all the colours of fall!

And by some stroke of luck, on the same day I found these pretty lilac coloured beaded napkin rings at Crate & Barrel for 50% off.  Score!

And there’s my pumpkin flower arrangement.

Sprinkle some leaves.
Add some friends and family.  Oh, and food.  Lots and lots of food.
Simple.  Purtay.  Yummy.
I really wanted to get a picture of everything on the table, but you know how these things go, 
dinnertime hits, a bomb goes off in the kitchen, and pictures just don’t get taken!
This is the best I could do!
