What’s For Dinner? Comfort Food! Meatloaf!

Here’s a great recipe for meatloaf!  This is an easy meal for a weeknight because it’s quick, you can make it ahead, and almost everyone loves a good meatloaf!

Meatloaf
Loaf:
1 lb lean ground beef
1/2 cup chopped onion
2 tbsp milk
1 egg
1/4 cup oats
salt & pepper


Sauce:  (this makes a lot of sauce, use half for the baking, and half for serving)
1/2 cup ketchup
1/2 cup water
2 tbsp mustard
1 cup brown sugar

Combine beef, onion, milk, egg, oats, salt & pepper.
Put into a loaf pan, and make a well down the centre of the loaf.
Pour about 1/2 of the sauce into the well.
At this point, you can put it into the fridge until you are ready to bake it that evening.
(I made this at noon when baby was sleeping)
Bake at 350 degrees for 1 hour.  Drain.  And put onto a serving plate.
Use remaining sauce when serving loaf.

    Serve with mashed potatoes and peas or green beans.

    1. I just made your meatloaf and it was so good. I have never put oatmeal in my meatloaf but it really works
