This past weekend I pretty much went crazy in my kitchen. I don’t know what came over me really. I think I’m feeling inspired by the fact that spring is really truly here, I’m able to get outside and plant my garden, I’m wearing shorts and overall the weather has been so great. When it’s like this I start dreaming of new recipes, I start planning our summer…basically I’m just feeling pretty happy that winter is gone. Buh bye.
So with all this new found inspiration, I’ve been dishing up some deliciousness in my kitchen! I made a Strawberry Rhubarb Loaf, a Strawberry Rhubarb Baked Oatmeal, and this crazy yummy cheesecake dip. This dip was completely inspired by summer…
It’s all about the s’mores! Do you like s’mores? How about cheesecake? What about the two put together? Yes.
S’more Cheesecake Dip
Last weekend I made this delectable little treat for dessert and it was gobbled up in silence. Then followed by a ginormous glass of milk. Needless to say, it was enjoyed very very much. I mean, there’s not much to not like about it…it has marshmallows, chocolate, cream cheese and graham crackers. And it takes all of about 10 minutes to make which is perfect for a dessert for a party or get together. It’s so simple to make, takes no time at all and is pretty much guaranteed to be a hit!
S'more Cheesecake Dip
- 1 - 8 oz package of cream cheese softened
- 1 - 7 oz jar of marshmallow fluff
- 2 cups mini marshmallows
- 1/4 - 1/3 cup mini chocolate chips
- graham crackers for dipping
Preheat your oven to broil.
Whip together the cream cheese and marshmallow fluff until creamy and smooth, then transfer the mixture to a small baking dish.
Top the mixture with the mini marshmallows, then sprinkle on the mini chocolate chips.
Place the dip in the oven and broil until the marshmallows turn golden brown - this will only take less than a minute so make sure to watch it very carefully! Trust me.
Recipe NotesYou can serve this dip right away with graham crackers or fruit. BUT it's even better after it's sat in the fridge for a while!

But make sure you watch it while you are toasting your marshmallows. Just do mmmmkay. Or else it’s possible that you might set off the fire alarm and end up with a charred dip. Just sayin. Not from experience or anything. 😉
Oh and one last thing…if you’re going to take a picture of toasted marshmallows do it quick or they deflate into sad little marshmallows. And don’t get caught in the rain while taking said photos. 😉
