Ahhhh summer, it’s arrived early here and I seriously couldn’t be more happy about it.  The air smells like sunshine, flowers are blooming and the skies are blue…it’s the best time of year.  We’re gearing up for a hot summer so I plan on making sure we have plenty of cool drinks and treats around.  I like to keep a giant jug of fruit infused water handy for everyone to access at any time, we indulge in the occasional delicious ice cream sandwich, and of course we enjoy many popsicles.

Coconut Popsicles

These Coconut Popsicles are homemade, refreshing and a perfect summer treat! Only 3 fresh ingredients for this simple to make popsicle recipe!

Whoa nelly it’s hot o’er here.  HOT.  31 degrees hot.  And I love every minute of it after our winter-that-would-never-end.  I welcome the heat with every fibre of my being…and I tell you if I hear one person complain about the heat I will lose my mind.  Seriously.

Besides, hot weather means you have every excuse you need to eat copious amounts of popsicles right? Especially when you can make them yourself.  Making popsicles is the easiest thing the world to do.  Really, most of the time you are just freezing juices or yogurt with fresh fruit…delicious and healthy!

But I do have to admit that homemade popsicles take a bit of getting used to.  The thing about homemade popsicles is that sometimes the texture is not what we’re used to.  Store bought popsicles have all kind of binding agents that make them smooth, and homemade ones do not so the texture is different.  I find homemade popsicles a little icy, but I don’t mind that, especially since I like knowing all the ingredients in them.

Coconut Popsicles

Now that it’s summer and the kids are off school, I’m back at filling my freezer with popsicles.  I’ve made pink lemonade popsicles, fudgesicles and now these coconut popsicles.  I’ve been wanting to make coconut popsicles for so long and I’m pretty happy with the way they turned out…I especially love that they only have 3 ingredients.  It doesn’t get much easier than that!  These coconut popsicles are fun too because you can tailor them to your tastebuds…add more sugar if you like, or add some pineapple juice to make a pina colada popsicle.  Have fun with them!

Description

These Coconut Popsicles are homemade, refreshing and a perfect summer treat! Only 3 fresh ingredients for this simple to make popsicle recipe!

Ingredients

  • 1 litre of coconut milk  (I use canned coconut milk and sometimes coconut milk in a tetra pack)
  • 4 tbsp icing sugar (confectioners sugar)
  • 1/4 cup sweetened flaked coconut

Instructions

  1. Combine all of the ingredients, stirring until the sugar is completely dissolved.
  2. Pour into popsicle moulds and freeze.

Notes

To add wooden popsicle sticks, freeze your popsicles without the sticks for about 1 hour, then add them in. That way they will stand properly in your popsicle.

Creamy Coconut Popsicle Recipe Tips:

  • Adding popsicle sticks:  to add wooden popsicle sticks, freeze your popsicles without the sticks for about 1 hour, then add them in. That way they will stand properly in your popsicle.
  • I prefer to used canned coconut milk for this recipe because I find it more creamy than a lot of coconut milk.  Sometimes I will use coconut milk in tetra packs and it works well too, it’s just not as creamy.
  • If you don’t like the texture of the added shredded coconut, feel free to leave it out.
  • To make a pina colada flavour, add some drained crushed pineapple to the recipe.

Jell-O Kool-Aid Popsicles

Sumsumsumsumsummmmmmmmertime! 

I’m sure it’s coming here right? I mean I did see a yellow orb in our sky for a little while yesterday…And I am wearing shorts, tank tops and sandals even if I am freezing my buns off…  

But even if it’s summer for about 5 minutes in a day, I’ll take it. And we’ll celebrate it with summer treats like popsicles. First we had Shirley Temple Popsicles, and then we made these Jell-O Kool-Aid popsicles!

It’s no surprise these popsicles are the kids favourite! We’ve tried grape and cherry, and would love to try lime!

Jell-O Kool-Aid Popsicles


  • Yield: 6 popsicles 1x

Ingredients

  • 13 oz package of Jell-O
  • 1 package of Kool-Aid (unsweetened)
  • 1/2 cup sugar
  • 2 cups boiling water
  • 2 cups cold water

Instructions

  1. Use the same flavour of Jell-O and Kool-Aid for these.
  2. Dissolve the Jell-O, Kool-Aid and sugar in the boiling water.
  3. Add the cold water. Mix.
  4. Pour into popsicle moulds and freeze!

Shirley Temple Popsicles

Turn a favourite drink into popsicles!  These Shirley Temple Popsicles are delicious and easy to make!

I don’t know about you, but for me, popsicles are the ultimate fun summer treat! And I love them even more now that we make them at home. Only because there are SO many fun recipes to try, and so many great popsicle molds to use! The kids are all over this fun experiment!

As a kid, one of my most favourite drinks was a Shirley Temple. I remember being at our cabin, and my Grandma making these fun drinks for all us grandkids. I always felt so grown up sipping one!  Such great memories!

So recently I had a hankering for a Shirley Temple, and thought my kids would love to try one! Then I thought, they would make an amazing popsicle! And indeed they do! These were an all around hit for adults and kids alike!

Shirley Temples Drinks and Popsicles


Description

This recipe makes 1 drink.  If you double the recipe it will make 6 popsicles.

Ingredients

  • 1 cup lemon-lime soda (I used 7-Up)
  • 2 tbsp Grenadine
  • 1 tbsp orange juice
  • cherry for garnish (fresh or Maraschino)

Instructions

For the Shirley Temple Drink:

  1. Fill a glass with ice.
  2. Add the soda, Grenadine, and the Orange Juice. Stir.
  3. Garnish with a cherry, either a fresh cherry or a Maraschino cherry.

For the Shirley Temple Popsicles:

  1. For the popsicles, I doubled the recipe and filled my 6 popsicle moulds.
  2. I pitted, then chopped up about 10 fresh cherries and distributed them evenly between the popsicle moulds. They give the popsicles a nice texture! I might even add more next time.

These Summer Sunshine Cookies are a fun addition to your cookie jar this summer!  Delicious chewy coconut oatmeal cookies made festive for summer with the addition of brightly coloured chocolate candies.

With summer right at our doorstep and the kids home for the holidays, it’s time to fill the cookie jar!  Make these festive and fun cookies for summer by adding colourful polka dots or flowers made out of candy coated chocolate.

Who’s excited to not be making school lunches for 2 months?!  This gal right here.  Even though I am relieved not to have to make school lunches every morning for a while, having the kids home just means I have to be prepared in a different way.  Kids home for 8 weeks means I have to rethink my meal and snack plans.

To avoid the “Can I have a snack?” question a million times throughout the summer, I like to fill the fridge and pantry with easy to grab snacks like granola bars, fruit, yogurt and cheese, and I also like to fill the cookie jar. There must be a supply of cookies 😉

These Summer Sunshine Cookies are a fun summer treat for the kids.  They’re loaded with oats and coconut, then decorated with fun and bright coloured chocolate coated candies.  A perfect summer snack…they’re great for picnics and beach days too!

Description

These Summer Sunshine Cookies are a fun addition to your cookie jar this summer!  Delicious chewy coconut oatmeal cookies made festive for summer with the addition of brightly coloured chocolate candies.  Makes a big batch.

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups oats (I use quick oats)
  • 3/4 cup shredded sweetened coconut
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/8 tsp salt
  • candy coated chocolate (I used mini M&M’s)

Instructions

  1. Preheat your oven to 350 degrees.
  2. With a mixer, cream together the butter and sugars.
  3. Add the egg, then vanilla.
  4. In a separate bowl whisk together the flour, baking powder, baking soda, salt, oats and coconut.
  5. Then add the flour mixture to butter mix, and combine thoroughly.
  6. Form into walnut sized balls, and lightly press down with a fork.
  7. Decorating your cookies:
    • To make the Yellow Polka Dot Cookies: add the M&M candies to the cookies before baking them. Make sure to place the candies as close together as possible so they spread out nicely during baking…refer to the image below:  Bake for about 12 minutes.
    • To make the Flower Cookies:  bake the cookies without any M&M’s (bake for about 12 minutes). After the cookies are done baking let them rest for about 3 minutes, then press the candies into the centre of the cookie in the shape of flowers.
  8. Enjoy!
