These Chewy Peanut Butter Blondies are rich, peanut buttery and SO delicious! They won’t last long!

One afternoon a long long time ago…ok it was last week…I was dreaming of peanut butter. That happens, for real. I have a deep love of anything peanut butter, and sometimes it’s all I can think about. Maybe it’s a vitamin deficiency of some kind, but really, it doesn’t matter, I’ll just go with it.
This craving wasn’t just about dipping a spoon into a jar, no it was much more than that. I needed buttery, soft and chewy. So I made Peanut Butter Blondies.
And they were exactly what I needed. They’re chewy, soft and rich…buttery, peanut buttery and SO delicious. Warning…you will need a glass of milk to go with them. Oh, and you might not be able to stop at just one square.
This recipe makes a really big batch (it’s baked in a 9 x 13 pan), and because they’re so rich, you might want to cut them into 1 inch squares. I hope you enjoy them as much as we did!
Chewy Peanut Butter Blondies
- 1 cup butter
- 1 1/3 cup peanut butter
- 1 cup brown sugar
- 1 cup sugar
- 1 tsp vanilla
- 2 eggs
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
Preheat your oven to 350 degrees.
Using a mixer, cream together the butter, peanut butter and sugars.
Add the vanilla and eggs, mix until smooth.
In a separate bowl whisk together the flour, baking powder and salt.
Add the flour mix to the butter mix and combine, don't over mix.
Spread the batter in a 9x13 baking dish.
Bake for 40 - 45 minutes, or until the centre doesn't jiggle, and the edges are brown.
Wait for at least 15 minutes (30 is better) before cutting into squares.
