Eggnog Ice Box Cookies

These Eggnog Ice Box Cookies with Eggnog Glaze are a perfect Christmas treat! Keep the dough in the fridge for up to 3 days and bake them as you need them (or even freeze a log or two for later)!

I’ve got my Christmas cookie bake on! I love love to bake Christmas cookies. I mean, what better excuse does one need to bake cookies than the holiday season? There’s no guilt with Christmas baking, right?  😉 So this year I wanted to make ice box cookies with eggnog in them…eggnog is the best. I love it on its own, in lattes, in coffee, so why not in cookies?  Yum.

Eggnog + cookies = delicious.

Between the cookie and the icing, these Eggnog Ice Box cookies are bursting with eggnog flavour! Actually the icing is so good and eggnog-y that I’m already scheming up ways to use it somewhere else! Serve these cookies up with a mug of hot chocolate or coffee. So good! Now if we could just make these last more than a day without everyone eating them…

Ice Box Cookies are great for the holidays!

What I love most about making ice box cookies is that you don’t have to bake all the cookie dough at once. The dough gets rolled into logs, then kept in the fridge for up to 3 days, then you just slice and bake the cookies as you need them (or even freeze a log or two for later). I find that one log lasts for a day and a half, then it’s time to bake a fresh batch!

Great for gift giving!

Another great thing about ice box cookies, is they’re great for gift giving. Tie some pretty ribbon on each end of the parchment paper wrapped log, then give one to friends and family, with baking instructions, and let them bake these at home!

Eggnog Ice Box Cookie Recipe Tips

  • Eggnog: Use the full fat eggnog, it has the best flavour.
  • Flavour option: If you really love nutmeg, you can add 1/4 tsp more nutmeg to the batter.
  • Slice and bake as you want: You don’t have to bake all the cookies at once. The dough will last in the fridge for up to 3 days (or more), so bake what you need as you need them! Just ice them as you need to as well! Fresh cookies every day….mmmmm
  • Frosting: The eggnog frosting is a must! It’s such a delicious topping you need to add!
  • Freezing: You can freeze these cookies, just don’t ice them before you do. Ice them when you’re ready to serve them.

Ingredients

Ice Box Cookie

  • 1 cup butter (at room temperature)
  • 2 cups sugar
  • 1 cup eggnog (I used 2%)
  • 5 1/2 cups flour
  • 1 tsp baking soda
  • 3/4 tsp nutmeg

Eggnog Icing

  • 1/4 cup butter (at room temperature)
  • 3 cups icing sugar
  • 1/3 cup eggnog

Instructions

Ice Box Cookie

  1. In a mixer, beat together the butter and sugar until it’s light and fluffy.
  2. Then add the eggnog, and mix well.
  3. In a separate bowl, whisk together the flour, baking soda and nutmeg.
  4. Add the flour mixture gradually to the butter mixture and mix well.
  5. Shape the dough into 4 balls of dough, then roll the dough out into 8 inch long logs.
  6. Wrap each log in parchment paper and refrigerate for at least 2 hours or overnight.
  7. When it’s time to bake the cookies, preheat the oven to 375 degrees F.
  8. Then remove the parchment paper and slice the dough into 1/4 inch pieces.
  9. Place the cookies onto a parchment paper lined cookie sheet and bake for 8-10 minutes.
  10. After the cookies have finished baking, place them on a wire rack and let them cool completely.

Eggnog Icing

  1. In a mixer, beat the butter until it is light and fluffy.
  2. Add the icing sugar and eggnog, and mix until smooth.
  3. Ice each cookie once they have cooled completely.
  4. Optional: Sprinkle with a teeny bit of nutmeg on the cookies for a garnish.

  1. Can you make half the recipe and will they still turn out seems like a lot of cookies. How many does the batch make?

  2. Hello, I just finished baking a batch of these cookies. They taste great, but they spread and did not hold their shape. Do you think that additional flour would help this? Thanks.
