Blueberry Buttermilk Muffins

I think these Blueberry Buttermilk Muffins just might be one of my most favourite of all time.  They’re sweet, soft and bursting with the delicious flavour of blueberries!  These actually remind me of the muffins you can get at Starbucks that are SO good…oh and warmed up?  The best!

These muffins are perfect for the summer months when blueberries are bountiful!  But they’re also fantastic for when you need a little mid-winter pick me up, because they will take you back, momentarily to the hazy days of summer!

They’re moist, sweet and bursting with blueberries!  They kind of remind me of those super delicious blueberry muffins that Starbucks use to sell…yum.

Ingredients

  • 2 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup buttermilk
  • 1 1/2 - 2 cups blueberries (frozen)

Instructions

  1. Sift together flour, baking powder, soda and salt.
  2. Cream butter, sugar, and vanilla. Add eggs and milk.
  3. Combine flour mix and butter mix. Don't over-mix or your muffins will be chewy.
  4. Add frozen blueberries, and mix by hand. Frozen berries work the best because the berries stay in one piece and they don't tend to colour your batter blue.
  5. Bake at 400 degrees for 20-25 minutes.

  • Reply Michele August 27, 2015 at 12:11 PM Jo-Anna, I LOVE blueberry muffins!!!! So this recipe can be cooked in a cake pan? I don't own a cupcake pan & was wondering if I could use a loaf pan ? (5 1/2 x 9 1/2 dark, I know very little about cooking. I just measured this pan but I don't think that's the "professional measurement. a loaf pan you'd make meatloaf or homemade bread in. Excuse my ignorance.) Or a square pan, light color, silver or grey, whatever it's called. I stay away from grease: oil & butter so may I use waxpaper to line the entire pan??? Should I make sure it doesn't stick out of the pan or it will burn? I've never cooked with waxpaper before. I REALLY want to make these, now if I could!!! Yum!!! Any advice would be appreciated. I hope you won't post this. I'm no cook & this is an embarrassing E-mail. lol I hope you understand. Thank you!!! Thanks for sharing this awesome recipe!!!! Take care, Michele
    • Reply Jo-Anna@APrettyLife August 27, 2015 at 7:56 PM Hi Michelle! Don't be embarrassed at all! I'm sharing the link to another recipe that I think would work better for you...it's basically the same recipe as the muffins, but it's made in a pan. For this particular recipe I used a 9x9 baking pan. Hope this helps! http://www.aprettylifeinthesuburbs.com/blueberry-buttermilk-breakfast-cake/ Happy Baking! Jo-Anna
      • Reply Michele August 28, 2015 at 10:28 AM Thanks Jo-Anna!!! At 47 I have the desire to learn to cook more than food from a box. I appreciate your help very much!!! For the first time I'm going to buy Baking Soda & Vanilla Extract so I can bake delicious recipes like the one you've shared with me. Thanks again for your help!!! I'll let you know if I screw it up. lol You're very kind. I have a 9x9 pan so I can't wait to make this!!!!

  • Reply Michele September 1, 2015 at 3:19 PM Hi Jo-Anna, Another stupid question. I'm going to grocery store tomorrow. Does the store sell muffin holders? Or just cupcake ones? Thank you!!! From a new baker, Michele
    • Reply Jo-Anna@APrettyLife September 1, 2015 at 6:46 PM Hi Michelle! I just use regular old muffin liners for both cupcakes and muffins! Happy baking!
  • Reply Joanne Gauthier October 17, 2016 at 12:03 PM Hi Jo-Anna, I pinned this recipe a while back and didn't try it until today. Boy, was I missing out! I loved them! I added a bit of lemon zest and lemon juice just because I love all things lemon and when added to blueberries it's double the goodness. I will delete all of my other blueberry recipes as this is the only one I will ever need. Thank you??? Joanne
    • Reply Jo-Anna@APrettyLife October 17, 2016 at 12:25 PM Hi Joanne! Oh I love to hear that...this recipe is our favourite too! And I love that you added lemon juice and zest, I think I'll do that next time too!
