This was a hard recipe to name…it’s just like a Chana Masala, except there is no garam masala spice in it so I can’t actually call it Chana Masala. But I don’t really know what to call it.
So I called it One Pot Coconut Chickpea Dinner, but really it’s just best if I describe it…this dish is chickpeas, cauliflower and sweet potato simmered in an onion/garlic/ginger/spice/tomato/coconut milk sauce, served over rice. And it’s DELICIOUS.
This dish came about one night last week when I was on day 4 of my husband being out of town, we were in the middle of a blizzard (an actual blizzard), and we were low on groceries. I had a few staples around…some canned chickpeas, tomatoes, onions, ginger and sweet potatoes, then I discovered a can of coconut milk and I knew I could make something healthy, hearty and delicious! One Pot Coconut Chickpea Dinner was born.
This vegetarian dish is going to be added to my regular dinner schedule. I really enjoy meatless dinners, and try to serve them at least once a week. Some of our favourites are my Creamy Butternut Squash Pasta, or Roasted Tomato Pasta Dinner, or Winter Vegetable Soup, and now this One Pot Coconut Chickpea Dinner! I love a dish loaded with healthy beans and vegetables.
I especially love a dish that is made with simple ingredients, and takes less than an hour to get to the table. For this One Pot Coconut Chickpea Dinner all that is required is about 10-15 minutes of easy prep, then you throw everything into one pot and let it simmer away for about 40 minutes. While it’s simmering and making your house smell amazing, you can start the rice. So simple and tasty. And my kids liked it! My pickiest eater even loved it, which is truly amazing because he never likes anything. So I was super happy he devoured his dish.

One Pot Coconut Chickpea Dinner
- 1 tbsp vegetable oil
- 2 tomatoes, chopped
- 1 large onion, chopped
- 2 tbsp minced fresh ginger
- 1 1/2 tsp cumin
- 1 tsp chili pepper
- 1/4 tsp salt
- fresh ground pepper
- 1 1/2 cups peeled and cubed sweet potato
- 1 cup chopped cauliflower (small chop)
- 1 - 19 oz can chickpeas, rinsed and drained
- 1 - 400 mL can coconut milk
In a skillet, warm up the olive oil in low-medium heat, then add the chopped tomatoes, onion and ginger. Cook until soft.
Then add the cumin, chili pepper, salt and fresh ground pepper. Cook for 1 minute.
Add the coconut milk, yam, cauliflower and chick peas. Mix well.
Simmer over low heat for 40-45 minutes, until the yam is soft and the mixture has thickened (it shouldn't be too runny)
Serve over rice and garnish with fresh cilantro.
