Pumpkin Spice Granola Bars

Ahhh pumpkin season…it really is in full force right now, and I’m probably posting this a little late according to the internets standard, but I’m more of make and blog post in the moment kind of gal.  You won’t find me baking with pumpkin and posting about it in August.  Nope.  October = pumpkin.  Pumpkin Oatmeal, Pumpkin Biscuits, Pumpkin Spice Bread…pumpkin pumpkin yumminess.

Last week I made these Pumpkin Spice Granola Bars for after school snacks for the kids.  See, I have a hard time with snacks.  I hate making them and end up giving the kids the same snack everyday:  cheese and apples, sometimes cookies.  So I thought I’d switch things up a bit and make something delicious and sweet, but packed full of nutrition.  And the best part?  The kids don’t even know how good these are for them!  Winner winner pumpkin dinner!  😉

These Pumpkin Spice Granola Bars are packed full of oats, raisins, coconut, almonds, dried apricots and pumpkin…and a few chocolate and white chocolate chips just for fun!

Ingredients

Scale
  • 2 1/2 cups quick oats
  • 1/3 cup oat flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • pinch nutmeg (more if you like)
  • cloves pinch
  • 1/4 tsp salt
  • 1 cup shredded coconut (sweet or unsweetened…it’s up to you)
  • 1/2 cup chopped almonds
  • 12 tbsp chia seeds
  • 1/2 cup raisins chopped
  • 1/4 cup chopped dried apricots
  • 1/4 cup chocolate chips
  • 1/4 cup white chocolate chips
  • 3/4 cup pumpkin puree
  • 1/2 cup liquid honey
  • 1/4 cup butter (melted)
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line a 9×13 baking dish with parchment paper.
  3. In a bowl combine the oats, oat flour, coconut, almonds, chia seeds, spices, raisins, apricots and chocolate chips.
  4. In a separate mixing bowl, using a mixer, combine the pumpkin puree, honey, butter and vanilla.
  5. Add the pumpkin mixture to the oat mixture and combine. I just used my mixer to do this part for me.
  6. Once the granola mixture is thoroughly combined, press it into the baking dish.
  7. Bake for 25-30 minutes, or until the top is light brown and dry to the touch.
  8. Then remove from the oven and lift the granola slab out onto a cutting board.
  9. Cut the granola into bars, being careful not to saw the bars – press down to cut so that you don’t tear apart the bars.
  10. Let cool completely.

I love how easy it is to make granola bars at home!  Not to mention the fact that they are far more nutritious than the store bought kind!  Plus, there are endless ingredient options to put in them too…just tailor the recipe to suit your tastebuds.  I hope you try them!

  3. I am a grandma who is always looking for something for the grandkids when they visit. I wonder, how do you think these would freeze? Perhaps they could be broken up for the granny;s breakfast after they’ve gone home?These bars sound sooo yummy!
