Daddy’s Deluxe Pancakes 3 Ways

Most weekend mornings my hubby is the one who makes us pancakes!
And he’s always experimenting with different flavours (some great, some not…sorry hubs…)   
But there are 3 flavours that we really love!
So roundin’ up Stampede Week, here goes:
Apple Oatmeal Pancakes or Waffles
1 1/2 cups whole wheat flour
1 cup rolled oats
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp salt
2 eggs
1 1/2 cups buttermilk
2 tbsp vegetable oil
2 tbsp brown sugar, packed
1 tsp vanilla
2 medium apples (granny smith and macintosh seem to have the most flavour)
  • Combine flour, oats, baking powder, baking soda, salt and cinnamon.
  • In a separate bowl, beat together eggs.  Add buttermilk, oil, sugar and vanilla.
  • Add the milk mix to the flour mix, and gently combine.  
  • Grate the apples (you don’t have to peel them).  Then fold them into the batter.
  • Let batter rest for at least 15 minutes before cooking.
  • Cook on a preheated medium to high heat griddle.
Peach Raspberry Oatmeal Pancakes/Waffles
Ingredients as above, minus the apples.
1 peach
1/2 cup raspberries
  • Make recipe as above, minus the apples.
  • Instead chop 1 peach into very small pieces.
  • Mix raspberries and peaches together.
  • Fold into batter.

Banana Cake Oatmeal Pancakes/Waffles
Ingredients above, minus the apples.
1 banana
  • Make recipe as above, minus the apples.
  • Instead chop 1 banana into very small pieces.
  • Fold into batter.

Tip!
  • You can use any combination of flour:  All whole wheat, all white, half & half.
  • For crunchier waffles, add 2 more tablespoons of vegetable oil.

    5. Hahah thats great that he likes to experiment..even if they are all not winners :) My husband is the main weekend breakfast maker too! If I could eat waffles or pancakes every day I would! This sounds like a wonderful combo of ingredients! I want to try it!
