Ricotta Oat Bran Pancakes

Ricotta Oat Bran Pancakes {A Pretty Life}
- – - – - -
This year my husband and I have decided to get out of our same old same old recipe rut, and venture out.  This means that we are going to try to use a new recipe at least once a week.  So to start, this weekend we tried this new pancake recipe for Ricotta Oat Bran Pancakes.  I know, right.  Shocking.  We always have the same pancakes.

And wouldn’t you know it?  This is my most favourite pancake recipe ever.  Ok, maybe next to peanut butter pancakes, but these are a very very very close second!  So so good.  Mouthwatering yumminess!

Ricotta Oat Bran Pancakes

Ingredients
  • 1 cup whole wheat flour
  • ¾ cup oat bran
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • 1 cup ricotta cheese
  • 1 cup milk
  • 1 tsp vanilla
  • ¼ cup canola oil
Instructions
  1. Mix flour, oat bran, sugar, baking powder, soda and salt.
  2. Whisk eggs in a bowl. Then add ricotta cheese, milk, vanilla and oil.
  3. Combine flour mix and cheese mix. Stir until just blended.
  4. Scoop about ¼ cup batter onto a preheated griddle.
Notes
I like to cut down on all purpose flour, so I often make these with ½ cup all purpose flour, and ½ cup oat flour. They taste just as delicious!
The recipe was from our great Canadian magazine, Chatelaine.
