Oh galettes how do I love thee? All rustic and free form and living the life in a perfectly un-perfect way. That imperfection is why I love this kind of pie. You get all the deliciousness of a traditional pie without all the fuss, and who can’t love that? Not me.
There are 2 ways to make a galette, one is to use a bought puff pastry crust and the other is to make a traditional pie crust. I like both crusts for different reasons. When I’m in a hurry or don’t feel like fussing with making pie dough, bought puff pastry crust is the best because it’s already made, and it’s delicious. Other times when I’m craving a good old fashioned pie but don’t feel like fussing too much with the crust, I will make the traditional pie crust dough and shape it into a free form pie. Traditional dough isn’t hard to make, and when you use it for a galette the pressure of a perfect pie is removed and I like that sometimes. Plus the minimal effort to make a homemade crust is worth it because nothing beats a traditional flaky pie crust.
Now that we’ve talked about crusts, lets talk about all the fillings! Now that summer is here and the markets are overflowing with seasonal fruit, it’s the perfect time to make galettes! Peach, apple, raspberry, strawberry, rhubarb, blueberry, apricot…yum yum yum yum yum.

Next to a peach galette, I think this Raspberry Galette is my favourite. I love raspberries, and when they’re baked into a pie crust I just can’t resist this dessert. I like to enjoy this galette with heavy cream or whipped cream.
Our summers here are always full of Saskatoon berries so we’re always looking for ways to enjoy them. This Saskatoon Berry Galette is a perfect way to use up some of those berries! Mmmm all the warm berries with cinnamon and sugar and pie crust and vanilla ice cream…

And there is nothing like a Fresh Strawberry Galette! Strawberries and pie are just meant to be together. I could eat this pie for days.
